The wait is over and Spring is here!! And with lighter days comes lighter meals. We can’t help but dwell on the fact that Summer is approaching and it’s time to kick your butt back in shape. With that, we are looking to meal prep and eat as many homemade and healthy meals as possible. In an attempt to save time in the morning, I’ve been pre-making my breakfasts. I wanted to share my super easy quiche recipe I’ve been obsessing over lately. I couldn’t find a recipe online that I absolutely loved so I tested a few out and came up with the one below. Enjoy!
1 cup of flour
¼ cup of olive oil
¼ cup of cold water
½ teaspoon of salt
Combine ingredients, mix and press into a 9-inch pie pan.
1 red pepper
1 handful of spinach
1 quarter onion (diced)
¾ cups of milk (I use almond milk)
Scramble eggs and milk then add in raw chopped veggies and pour over uncooked crust. Place quiche in preheated 400 degree oven and bake for 40-50 minutes- If crust starts to burn cover with aluminum foil.
What I love about this recipe is that it only takes about 15 minutes of prep and it lasts me for a couple of days. I just grab a slice each morning during the week. I love making it from scratch because I know exactly what is in it. If the veggies listed aren’t your favorite substitute for your favorites. If you’re more comfortable with measurements – veggie ingredients should be 2 cups.
